I made an awesome vegan cashew pudding and it is super easy and super yummy.
1 cup cashews that have been soaked in boiled water for 2 hours and then strained and rinsed.
4 tbsp maple syrup
3 tbsp enjoy life chocolate chunk pieces
1 cup filtered water
3 tablespoons chia seeds
3 tbsp cocoa powder
Dash Himalayan sea salt
1 tsp vanilla extract
Put all ingredients in a high powdered blender. I used a Vitamix, mixed for about 2 mintues. Poured into dishes and garnished with pepitas, unsweetened coconut and a few enjoy life chocolate chunks.
Put in fridge for 2 hours covered and then enjoy!!!
