I LOVE cobb salads.
But I don't love the high calorie and overloaded yucky junk in the cobb salads I get at a restaurant.
So I created a healthier cobb salad recipe and decided to share it with you so you can make a yummy salad that fuels your body.
1/8 cup vegan or regular mayonnaise
1/8 cup unsweetened coconut milk
2 tsp dill
1 clove garlic
Place in a jar and shake it up to blend!
1-2 cups field greens
1 hard boiled egg
Protein source (2 slices bacon, tofu, chicken breast or pork)
Shredded cheddar cheese (you only need a little for taste!)
Pour 1-2 tbsp of the dressing over your salad, mix and enjoy.
TIPS: Keep the jar of dressing in the fridge ready to go along with hard boiled eggs to make this salad quickly. Dressing will keep for 5 days. You can make easily make this a vegan meal by removing the egg and cheese and it will still taste yummy!
