I am SUPER lucky to have some amazing clients that love to make healthy meals but make them EASY! My client, Ashley, shared this recipe with me and I asked if I could share it and she said yes!!!! I served mine over NuPasta this time but it works over spaghetti squash or quinoa pasta.
Ashley Hogarth's EASY and TASTY Vegan Alfredo (in her own words!)
What you need:
1 medium white onion chopped
1 and 3/4 cup divided veggie broth
4 cloves or the whloe bulb lol of garlic (I looove garlic)
1/2 heaping cup of raw whole cashews (soaked in hot boiled water for 15-20min)
1 tbsp and a half of fresh lemon juice
1/4 bobs organic mill nutritional yeast or preferred brand.
In a large pan add onions and 1 cup of veggie broth, Sautee 4 min or so add minced Garlic, Sautee and simmer until all the liquid is absorbed (roughly 10 min or so).
In the meantime in a high powered blender, I use my Vitamix, add 3/4 cup of remaining broth, lemon juice, salt, a lot if pepper (1/2 tsp ish), I don't measure LOL, nutritional yeast.
Once onions and garlic have absorbed the liquid add to blender, drain and rinse the cashews and add them.
Blend on high until you have consistency you want. I add a little more pepper and salt after - if It's too thick I add a touch more broth.
