When I first received my Vitamix, I thought I was just going to have the best morning smoothies. I didn't realize that my whole cooking and baking life would change for the better! From soups to sorbets to muffins, kitchen life has become even easier. As many of you know, ease is my thang so I am one happy kitchen chef!
As I was experimenting with my new toy, I created a carrot muffin recipe (well modified the recipe from Vitamix) that was gluten-free, sugar-reduced and delicious. It is great as a snack or accompanies my carrot cake smoothie (want that recipe too? Click here).
Gluten-Free, Reduced-Sugar Carrot Muffins
What you will need:
1.5 cups Gluten Free Flour
1 tsp pumpkin pie spice
1/2 tsp baking soda
1 tsp cinnamon
1/4 cup coconut oil
0.5 cups of unsweetened coconut milk
1/2 cup sugar
Prepare a 12 muffin tin with muffin paper and pre-heat the oven to 350 degrees F.
In a large bowl, combine the dry ingredients (flour, spices and baking soda). In a Vitamix or food processor, combine the remaining of the ingredients. In the Vitamix, the carrots can go in whole, while in the food process you will have to shred them into the bowl before adding the remaining ingredients. If you do not have a kitchen machine, grate the carrots and whisk in the remaining ingredients (melt the coconut oil).
Add the wet ingredients to the dry and mix well. If the mixture is dry add a little more coconut milk until the mixture combines evenly.
Split the batter evenly between the 12 cups and bake for 20-25 minutes depending on your oven. Check if the muffins are done by using a toothpick in the middle; if the toothpick comes out clean they are done.
Want to make these vegan?
Flax eggs: To replace 1 egg - 1 tbsp ground flax with 3 tbsp warm water and allow to sit for 10 minutes.
Unsweetened Apples: 1/4 cup applesauce for each egg. You may need to reduce the milk.
I hope you enjoy these muffins as much as my family did! My husband ate 4 in one day. Although I would not suggest this as a healthy way of eating at least they were consumed; there are no preservatives in them so they will spoil quickly!
