Protein balls of course!
We are having an extra long weekend here in Toronto (we had a snow/ice day yesterday) and when my kids are home, I need to be prepared.
Prepared for what?
My kids are grazers, they eat every 2-3 hours; to my delight, my husband and I are believers in 5-6 meals a day. When my kids are home all day with us we need to be just as prepared as we are during the weekday. Therefore, on this Good Friday I whipped up some delicious protein bars to have on hand for when I hear the famous "mommy, I am hungry".
I love these because you can throw all ingredients in a food processor and have a snack in about 10 minutes.
What you will need:
1 cup almonds
1 cup dates
3 tbsp almond butter
5 tbsp coconut oil
110 g of your favourite all-natural vegan/vegetarian protein powder (be aware of the protein powder you are using, just because it says "all-natural" does not mean it is - my favourite macro balanced all-nautral powder is MySMARTshake).
Place your almonds in the processor and grind to a powder. It's ok if there are some chunks, it will get ground again. Add the dates, butter, oil and powder and grind again. FYI - I use 6 scoops of the Nutrimeal Free and the scoop size looks like this:
Grind the ingredients together until you get a paste and then form into balls. I freeze them and they last for weeks although, I usually have to make these every 1.5 weeks. The finished product:
These protein balls are great as a quick snack, on the go or after a workout! It soothes a sweet tooth craving (let's not lie, most of us have a sweet tooth) and is quick, easy and vegan!
