I have totally been hibernating!
Not from the summer, I have been outside enjoying the sun and fun. I decided, and very grateful that I am able to do so, to take the summer off and spend it with my 3 year old before she is off to school full-time. So I have been hibernating from work!
Lucky for you this means that I have been in the test kitchen creating new and healthy (and not-so-healthy-but-still-better-than-store-bought) recipes that I will be sharing over the following weeks as I see fit! The reason I am sharing today is that I caught my little one taking an early morning nap and I thought it was a perfect time to snuggle up next to her while I type!
Now onto the recipe!
You will need:
2 large sweet potatoes, peeled and cubed
1/4 of an onion chopped
1/3 cup of 4% cottage cheese, whirled until smooth (you can use a food processor, blender, hand mixer, etc.). Ensure you have 1/3 cup smooth cottage cheese, no chunks because that's gross!
2 tablespoons freshly squeezed lemon juice
1 teaspoon paprika and 1/2 teaspoon cumin
Boil the potatoes until tender and allow to cool. Once cooled transfer them to your serving bowl and mix with the onion. In a separate bowl, combine the remaining ingredients and whisk until smooth. Pour over the potatoes and mix. You can serve the deliciousness right away or allow to sit in the fridge overnight and allow all the flavours to come together.
