I made this recipe while I was completing a liver cleanse. It is dairy free, gluten free, vegan-friendly AND delicious! As always, it is quick, easy and healthy.
0.5 cups frozen strawberries
3 tbsp coconut milk (I put a can in the fridge and used the thickened stuff that was on top. This is a great way to make whipped cream too but that’s for another day. Please check the ingredients of your coconut milk, try to buy one that is mostly coconut without any other ingredients except water).
1 tsp vanilla extract
1-2 drops Sweet Leaf Stevia (optional – you can use honey or maple syrup too).
Cookie dough (optional - the ice cream is delicious on it's own):
¼ cup pitted sayer dates (I like Parnoosh)
½ tsp vanilla extract
1 – 2 tbsp cacao nibs
First, grind up the almonds into a powder in a food processor. Add the dates and vanilla until you get a good consistency; then add in the cacao nibs. Remove from processor and make into little balls (these made enough for 3 “ice creams”). Next, combine all the ingredients for the ice cream in the food processor and blend; try the ice cream without any sweetener, you make like it without! I found the ice cream made 2 servings but that all depends on your "scoop"!
If you wish, instead of this cookie dough, you can use the raw cacao balls posted here as your cookie dough. I will be posting a peanut butter cup recipe next month that would also be an amazing accompaniment!
